What is a Bistro?
In its Parisian incarnation, a bistro is a small restaurant which serves moderately priced simple meals in a modest setting with food that is usually based around home-style cooking.
For us, we wanted our place to have simple and delicious food, inspired by our location in the Fraser Valley and the diversity of cultures around us. Our menu has influences from Southeast Asia, India, and Latin America, as well as from our European and Canadian roots. We want to make things from scratch, sourcing ingredients grown in the Fraser Valley and adding our touch from our chefs to create a flavour that is unique to our restaurant.
About your hosts.
Greg and Sheila have always loved serving people. Both born and raised in Chilliwack, their social circles run deep in the community of Chilliwack, having been in business in Chilliwack since 1985.
Sheila and Greg have similar upbringings with both of their fathers in the logging industry and both their mothers involved in the medical field, which explains their deep interest in providing for and caring for people around them. They entered the service industry with nightclubs and a liquor store before making their way into the restaurant business. They were passionate about entering the business sector as a practical way to provide thoughtful service to those around them, which brought them to opening Garrison Wine and Liquor Merchants and Garrison Bistro. The number 11 is important to them, as November 11th, 2011 was when they opened the Bistro.
This passion also explains their love of sports. Greg has a long history of playing hockey, playing 8 years abroad in both junior and professional leagues, including exhibition games with the Pittsburgh Penguins. After coming back, he became deeply involved in the sporting community in town, starting adult recreational ball leagues while running their nightclubs. Because of this love of sports, we choose to play sports games on our TVs at the bistro.
Greg and Sheila have been married for 35 years.
